RALEIGH, N.C. (WNCN) — A North Carolina State University professor who slowly improved his “backyard batches” of barbecue sauce over more than 15 years is rolling out a new sauce with the university, officials said Thursday.

Dr. Chris DePerno, professor of fisheries, wildlife and conservation biology at N.C. State, created his own product called Dr. D’s Original Barbeque Sauce, serving it at gatherings of family and friends, according to an NC State University news release.
Over the years, Dr. D’s Original recipe was refined into its current “signature sweet, smoky, tangy and peppery” flavor.
The new product is called NC State Slobberin’ Sauce, an officially licensed barbeque sauce created in collaboration DePerno.

Wolfpack officials said the new co-branded sauce “celebrates North Carolina’s rich barbeque tradition” while giving back to the university.
The university said the new sauce helps answer the age-old question between different barbecue flavors in North Carolina.

“Slobberin’ Sauce bridges the North Carolina barbeque sauce gap by combining Western N.C.’s tomato-based boldness and Eastern N.C.’s vinegar-based flavors into one recipe designed to appeal to barbeque fans across North Carolina,” the news release said.

Royalties generated through NC State’s trademark licensing program and sales of Slobberin’ Sauce will support student scholarships, officials said.

The sauce joins another N.C. State food product — Howling Cow brand ice cream, which is made from milk at N.C. State’s Dairy Research and Teaching Farm near Lake Wheeler.
The sauce will be available on the Slobberin’ Sauce website and through Dr. D’s established retail and direct-to-consumer channels.
N.C. State also has other officially licensed co-branded products in the food/beverage field: a series of wines with Shelton Vineyards, a beer with R&D Brewing, PackSnacks with 1in6, and coffee with 321 Coffee, Greater Good. The owners of 321 Coffee and the 1in6 owner are Wolfpack alumni.
